Julia Child’s Heart!

Well, today’s a big day, I cooked Julia Child’s signature, Boeuf bourguignon. Yesterday, because of the Buddha holiday, I couldn’t get the red wine except the other ingredients. That’s why I had to go to the mall again to get the wine. ” Cotes du Rhone ” that’s the name of the wine I bought.

My friends helped me cook that Boeuf Bourguignon so that I could accomplish it well. That was really hard. One of my friend even got a cut at his hand while he was opening the can.

Here’s my strategy for this battle!

Time : over 2 hours

Ingredients!
1. Bacons
2. 3 1/2 tablespoons oil
3. lean stewing beef, cut into 2-inch cubes
4. 1 carrot, sliced
5. onion
6. Salt and pepper
7. 2 tablespoons flour
8. 3 cups red wine (Cotes du Rhone)
9. 2 1/2 cups brown beef stock
10. 1 tablespoon tomato paste ( I used tomatoes )
11. 2 cloves mashed garlic
12. 1/2 teaspoon thyme
13. bay leaf
14. 3 1/2 tablespoons butter
15. mushrooms

Strategy!

– Simmer the bacon with 1 1/2 quarts water for 10 mins and dry.
– Place the lardons in the casserole with a moderate heat to make them brown lightly. remove them in the plate.
– Dry the beef with the tissue towel ’cause if is not dry, it won’t be brown. Saute’ till brown. Then add it to the lardons.
– Add sliced vegetables into the same fat ad make them brown.
– Role the beef on the flour to coat it. Then toss into the casserole again.
– Put the beef, lardons and vegetables into the pot and add the wine and meat stock.
– Add tomatoes, salt, pepper, bay leaves and thyme. Simmer for 4 hours.
– For mushrooms, heat 1 1/2 tae spoons butter and oil in the skillet till bubbling.
– Toss the mushrooms inside and shake for 4 mins to brown.
– Simmer the onions in the stock with salt and pepper for 30 mins.
– Add the onions and mushrooms into the beef and simmer. Then, you can serve it.

You can serve it with noodles, bread or potatoes. I served with potatoes.

Actually, it was so handy to make it. You know what, I did it! At last …. Well, it was’t like ” wow or omg ” but it was delicious !

Imagine her magnificent voice, ” This is Aaron, Bon Appétit ! ”

Tried New Thing!

I failed one, so I tried a new one which is good and able to feed my friends well. They agreed to have dinner at one of my friend’s house. I bought the ingredients at the mall, actually I wanted to cook ” Julia Child’s Boeuf bourguignon”, but I couldn’t get the red wine ’cause today’s Buddhist Holiday. So, I bought the other ingredients and also some egg plants.

My friends, K and May were also the famous chefs for that dinner. K fried 7 Chicken drumsticks which were very soft and nice. May cooked the green vegetables which had a nice smell and a great taste. For me, I cooked egg plants with tomato paste. I didn’t even know if I were able to do it or not. I was juz doing it. Well, It turned out so good. They loved it.

I think I should try more new things some time.

Tomorrow is “Julia Child’s Boeuf Bourguignon” day. Don’t miss it! Is anyone reading?

Beef Sirloin Steak Roll!

I thought of cooking something new and fresh this week. So, I was thinking a lot and I asked my friends what they wanna eat. There are lots of advices. Then I thought, like, I should cook something light. Then, the beef steak was in my mind. So, I went to Siam Paragon where I can get the best qualified beef today. I saw that giant beef sirloin meat was staring at me with the look ” ya wanna piece of me?”…. then I decided he will be my enemy for this week, ” of cuz, I do, beef “. Well, They are expensive ones though. I bought around 1 kg of sirloin beef and other stuffs I need but Chinese Rice Wine. I searched all across the grocery store but couldn’t find it. I just found the Liquor Store which has the ” expensive look “, but I went in to check. Then, I found that and it’s not expensive at all. Another thing, I also found the French Red Wine which is needed for the “Beef Bourguignon”, I’ll cook it some day, maybe next month.

When I was cooking, the beef rolling is quite handy,u know. I needed help and asked for amara and may to help me rolling. May was rolling the steak and amara was cutting the ginger into small pieces. Unfortunately, she cut her finger, which was quite deep. We were, like, shocked and let her run under the water and gave her a plaster. Now it seemed ok and she’s resting. May and I were continuing the cooking.

Well, Here’s my 3rd battle begins!!!!

Marinade

1 tablespoon soy sauce

1 teaspoon vegetable oil

freshly ground pepper

Sauce

1 tablespoon oyster sauce

1 tablespoon Chinese rice wine or dry sherry

2 cloves garlic, thinly sliced

¼ cup canned chicken broth

Filling

1 tablespoon vegetable oil

1 teaspoon minced garlic

1 teaspoon minced ginger

1 carrot, cut into 2 inch matchsticks

1 tablespoon soy sauce

1 teaspoon sesame oil

4 ounces enoki mushrooms

2 teaspoons vegetable oil

2 teaspoons butter

¼ teaspoon sesame seeds

I froze the beef in the fridge for 30 mins and slice the beef into the thin layers.

I put the ingredients for making the marinade and add the beef slices into the marinade for 15 mins.

Then I put the ingredients for the sauce.

When I’m doing for the fillings, I heated the pan and add the vegetable oil, garlic and ginger, and stir for 20 seconds. Add the carrots and stir. Then add soy sauce, sesame oil and stir. After that, put them in a bowl and let them cool.

Let’s start rolling the beef, the difficult and handy thing for me.Spread the beef slices and put the mushrooms and the vegetable mixture. Roll the beef and secure it with the half of the tooth pick.

Place the beef steak rolls in the pan with the vegetable oil heated with the butter. Add the sauce into the pan. 1 – 2 minutes til its cooked. Sprinkle the sesame seeds and it’s …. done !!!

My steak roll turned out to be lil’ bit ugly, maybe more, but It was delicious though. Enjoy!!!

Thai Shrimp Skewers with Asparagus!

Well, last week I promised to cook Hobo Eggs on last weekend but I couldn’t cook that ’cause then I was so busy with my studies and so. That’s why, I had to break my promise. But I’ll try it this weekend, for sure. Today, I was also so much busy with my classes and lab, but I don’t wanna break my promise again. I decided to cook this recipe ’cause I saw it on Elise’s Kitchen Blog and It seemed so delicious. So, I decided to try cooking that recipe. Thank you for sharing such a great recipe Elise.

So, I went to Big C this evening, to get shrimps, olive oil, coconut milk and red curry paste. I could get all of the ingredients I need but unfortunately could’t get the shrimp. I had to go back to my room and leave all the things I bought and had to go out to The Mall Bangapi again, to get shrimps. I was so worried ’cause it was late enough to close every shopping mall. Luckily, I got there in time and got the shrimps. They are pretty nice ones, big and fresh. I bought, like, around 1 kilo.

After everything finished, I could serve 9 of my friends !!!!!! Well, they loved it. It was such a feast.

Time: 50 minutes

  • Shrimps
  • 1/2 of the coconut milk can
  • 3 tea spoons of red curry paste
  • 2 tea spoons of fish sauce
  • lemon grass
  • 2 tea spoons of brown sugar
  • 2 tea spoons of olive oil
  • Asparagus
  • 3 gloves of garlic
  • Salt
  • Pepper
  • Sesame

1. Mix red curry paste, brown sugar, coconut milk and fish sauce together and toss the shrimps into it and put
it in the fridge for 30 minutes.
2. While marinating, soak the wooden skewers in the water not to burn in the pan while cooking.
3. Cut off the edges of asparagus and toss them on the frying pan with olive oil heated.
4. Mix lemon, garlic, salt and pepper. Roast about 10 minutes.
5. Shrimps are done marinate now. Skewer them and put them into the frying pan with olive oil heated. Roast       them about 3 minutes each side.
6. Sprinkle with sesame on the shrimp skewers.
And it’s……… done and I’ve won for the 2nd battle!! Enjoy!
P.S *… for next week, I still don’t know what to battle. I will let you guys know on my blog when I’ve decided!
